Two varieties of bean, criollo and trinitario, make up this chocolate with 58% cocoa. The beans are sourced from the region of “Sur de Lago” in North West Venezuela by Lake Maracaibo with its perfect climate surrounded by tall shade trees

Ecuador - Classic 70%
Ecuador’s wonderful Arriba Nacional beans, above the Guayas River, to produce this classic and delicate hot chocolate. The pods are harvested by smallholder farmers from March to June, who individually ferment their own cocoa beans in wooden boxes for five to seven days and dry them on cement patios or wooden tables.

Percentage Cocoa - 33%

For best results, please follow these recipe guidelines
Small 6-8oz serving: 3 tablets of chocolate & 175ml of milk
Regular 10-12oz serving: 4 tablets of chocolate & 225ml of milk
Large 14-16oz serving: 5 tablets of chocolate & 275ml of milk
Method for Steam Wand & Cup - Place tablets in a jug & completely
cover with boiling water for 15 seconds to soften, then pour away
the excess water. Now follow the relevant method below
Steam Wand Method - Add the exact amount of milk for the serving,
steam together to 68c & whisk.
Cup Method - add 25ml of hot (68c) milk or boiling water. Whisk with
the melted chocolate into a smooth paste. Top up with hot milk.
